Flourless Chocolate Cake Recipe

- Ingrediants -

100g butter
150g dark chocolate
4 large eggs
Pinch of salt
185g caster sugar
200g almond meal

- Preparation -

Preheat oven to 160~180 degrees Celsius.

Melt butter and chocolate together over low heat (akta patre pani niye tar upor choto akta gamla rekhe tar moddhe chocolate ar butter rekhe dile panir bashper taape segulo gole jaabe, majhe majhe nnere dite hobe).

Separate eggs and beat whites with a pinch of salt and about one third of the sugar until whites form soft peaks (total jinishta first e chinir sheerar moto holeo pore cream er moto sada ar norom hoye jabe, jotokkhon na hocchem narte thako).

In a separate bowl, beat yolks with remaining sugar until light and creamy.

Fold yolk mixture into chocolate mixture.

Then fold in almond meal, then egg whites.

Pour mixture into prepared tin and bake for about 50~55 minutes. A skewer inserted into the centre of the cake should come out clean, or with a few moist crumbs (not batter) attached.

Remove cake from oven and cover with a clean tea towel. Allow to cool in tin.

We served wedges of the cake with whipped cream and raspberries.

Vegetarian pasta salad






Ingredients (serves 4)
  • 350g spiral pasta
  • 250 g large corn (frozen or fresh)
  • 2 tsp olive oil
  • 250g fresh peas, shelled (frozen or fresh)
  • 250g punnet cherry tomatoes, halved
  • 50g capsicum (red)
  • 2 celery sticks, trimmed, thinly sliced diagonally
  • 10/15 basil leaves (Pudina pata)
  • Freshly ground black pepper (gool morich)
  • Salt
  • 100g mayonnaise
  • 2 potatoes
Method
  1. Cook pasta in a large saucepan of salted boiling water following packet directions until al dente (put a little salt in the water). Drain and refresh under cold running water. Drain well. Place in a large bowl.
  2. Boil corn, peas, potato. Cut the potatoes into small pieces.
  3. Heat oil in a medium saucepan over medium heat. Add the corn and peas, potato and cook, stirring occasionally, for 5 minutes or until tender. Set aside for 10 minutes to cool (The color of all the vegetables is important, don't cook much that the vegetables become grey).
  4. Add corn mixture to pasta, along with tomato, pepper strips, celery and basil. Add mayonnaise and toss to combine. Spoon among serving bowls and season with salt and pepper. Serve immediately.
Try this dish as an entree food (eat before the main food like birani, polao) or as a brakefast item, or with evening tea.

Default Butter chicken


Addabaj's Butter chicken





You need:

2 tablespoons of olive oil
700g ~ 750g chicken thigh fillets
3 tablespoons of butter
2.5 teaspoons of garam masala
2 teaspoons of sweet paprika
2 teaspoons of ground coriander
1 tablespoon of crushed ginger
1 tablespoon of crushed garlic
0.75 teaspoon of chilli powder
2 cinnamon stick
6 cardamom pods
1 can of pureed tomatoes (250- 300gm)
1 tablespoon of sugar
0.5 cup unsweetened plain yoghurt (tok doi)
½ cup of cream
1 tablespoon of lemon juice

For Marinate:

50 gm Tandoori paste
100 gm yoghurt
2 or 3 pinch of salt
1 teaspoon of lemon juice

Method:

To Marinate the chicken: Place chicken in a nonporous glass dish or bowl with lemon juice, tandoori paste, yoghurt, chili powder and salt. Toss to coat; cover dish and refrigerate to marinate for 24 hour.

Heat a wok or heavy based frypan, add the oil and swirl around. Cut the chicken into small pieces and add the chicken slowly, try not to lose the heat and stir-fry for about 5 minutes. Remove when only just cooked. (or you can grill the chicken pieces for 5 min each side with 200 c temp inside the grill or just place a thick metal grill over the stove, spray a little oil, grill the chickens for 3 to 4 mins)

Using the same wok or pan reduce the heat and add the butter let it melt and heat up. Add the garam masala, coriander, paprika, ginger, garlic, cinnamon stick and cardamom pods. Stir with a wooden spoon for about a minute until the fragrance of the spices emerges.

Return the chicken and coat in the spice mixture. Add the tomatoes and sugar and simmer gently for about 15 minutes. The chicken should be tender and the sauce slightly thickened.

Add the yoghurt, cream and lemon juice and stir through. Gently simmer for another two minutes and add coriander leaves on the top(dhoniya pata), then enjoy your meal.

This recipe is modified and tasted by me. Please let me know if you like it or having any problems.
